The study focuses on the effectiveness of CBx Serie in maintaining the physical quality of snakehead fish fillets for delivery fish sellers with a focus on sustainable nutrition improvement. The research developed an innovative cooling box, CBx Serie, to address the issue of maintaining fish freshness during delivery. The study aimed to design and analyze the effectiveness of the CBx Serie cooling system and describe the physical quality analysis of snakehead fish fillets stored in the CBx Serie for 12, 24, and 36 hours.
The city of Palembang is known for its production of pempek, a local delicacy that requires a significant amount of fish fillets daily. Freshness is crucial for the quality and price of fillets, especially snakehead fish fillets used in pempek production. The traditional method of using foam boxes with ice is limited in maintaining freshness, leading to a need for a more efficient and cost-effective solution. The research developed the CBx Serie, a cooling box based on peltier thermoelectric refrigeration and aluminum foil insulation, providing a cheaper and more sustainable alternative to portable refrigerators.
The CBx Serie was designed to operate at a low temperature, utilizing a digital thermostat and peltier thermoelectric refrigerator. The use of aluminum foil as thermal insulation enhances the cooling efficiency of the box, ensuring the freshness of fish fillets. The innovation targets a wide market, including food delivery riders, fish sellers, and fruit and vegetable vendors, contributing to sustainable nutrition improvement and environmental conservation.
