PESCADO A LA VERACRUZANA (VERACRUZ-STYLE FISH) INGREDIENTS METHOD • 4 white fish fillets (such as snapper or tilapia) • 2 tbsp olive oil • 1 onion, finely chopped • 2 garlic cloves, minced • 1 red bell pepper, sliced • 400 g canned chopped tomatoes (2 cups) • 50 g green olives, pitted (⅓ cup) • 2 tbsp capers, drained • 1 tbsp fresh parsley, chopped • 1 tsp oregano • Juice of 1 lime • Salt and pepper to taste 1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes. 2. Stir in the red bell pepper and cook for another 3 minutes. 3. Add the chopped tomatoes, olives, capers, oregano, lime juice, salt, and pepper. Let the sauce simmer for 10 minutes until slightly thickened. 4. Gently place the fish fillets in the sauce, spooning some sauce over the top. Cover and simmer for 10-12 minutes, or until the fish is cooked through and flakes easily. 5. Serve the fish hot, garnished with fresh parsley and extra lime wedges.

ARGENTINIAN BEEF / TOFU ESPETADAS INGREDIENTS METHOD • 500 g beef sirloin, cubed (or firm tofu for a veggie option) • 1 red bell pepper, cut into chunks • 1 yellow bell pepper, cut into chunks • 1 red onion, quartered • 2 tbsp olive oil 1. Grab a cool glass of lemonade or a sparkling citrus drink while your espetadas marinate 2. In a bowl, mix together the olive oil, garlic, oregano, parsley, smoked paprika, salt, and pepper • 2 garlic cloves, minced • 1 tbsp fresh oregano, chopped • 1 tbsp fresh parsley, chopped • 1 tsp smoked paprika • 1 tsp salt • 1 tsp black pepper to create the marinade. 3. Add the beef or tofu, bell peppers, and onions to the marinade and toss to coat. Let it marinate for at least 30 minutes (or longer for deeper flavour). 4. Thread the marinated beef/tofu and vegetables onto skewers. 5. Preheat your grill or grill pan to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the beef is cooked to your liking or the tofu is slightly charred. 6. Serve hot, with extra fresh herbs for garnish.
CHILI-LIME GRILLED CHICKEN INGREDIENTS METHOD • 4 chicken breasts or thighs 1. ready for some grilling goodness! • 3 tbsp olive oil • Juice of 2 limes • Zest of 1 lime • 2 garlic cloves, minced • 1 tsp chili powder 2. • 1 tsp salt • 1 tsp black pepper • Fresh cilantro, chopped for garnish In a small bowl, mix together the olive oil, lime juice, lime zest, garlic, chili powder, paprika, cumin, salt, and pepper to make the marinade. 3. Place the chicken in a dish or zip-lock bag, pour the marinade over, and let it marinate for at least 30 minutes (or overnight for best results). • ½ tsp paprika • ½ tsp cumin Grab a refreshing lime soda or iced tea while this zesty chicken marinates and get 4. Preheat your grill or grill pan to medium-high heat. Grill the chicken for 6-8 minutes on each side, or until the internal temperature reaches 75°C (165°F). 5. Remove from the grill and let rest for a few minutes. 6. Serve hot, garnished with fresh cilantro and lime wedges.
